yeah i've always been curious what it is about grills that make cooking meats so easy

like i've seen hot dog places where they take out a bunch of cold hot dogs, pile them on the grill, let them sit there forever, not being particular about the time or temperature, then serve them whenever the customer is ready, and they come out absolutely delicious and fully cooked.

meanwhile when I try to use a frying pan on a stove top at home, unless i add water, they just never turn out right.
