They're rated by how many generations they are from a serval ancestor, with the F1/F2 variants basically huge as fuck serval sized and F3 and lower being more normal cat size. The downside is that like most purebred cats they cost a fuckload and you're not likely to happen upon a random stray savannah cat (or with one as an ancestor) yet.
