Well, in the case of DT it wasn't practical. It was clearly stated that monsters' bodies could not handle DT, with exceptions like Martlet using it because they were already producing DT to begin with.
And I think even the game doesn't want you to think Chujin did the right thing. At no point does it ever portray Chujin's experiments as a success. Ceroba, who wants to continue his research, is explicitly portrayed as in the wrong. She's literally the antagonist and final boss of the game.
Chujin might've thought he was doing it for his family, but in reality, it was for the collective race, not his individual loved ones.
I dare say that deep down, Chujin was doing it for himself. It was selfish and reckless of him to do, and he didn't care enough about the risks to stop it. Ironically, that absence would lead to his family's downfall, that family he supposedly tried so hard to protect.
I believe it was said somewhere in a dev stream that Chujin was pressured into science by his family, who had ties to the king. That explains why Chujin was so obsessed with leaving some sort of legacy.
"muh legacy" was not in fact a meme - it was the driving force behind everything Chujin did. It was never really about monsterkind. Chujin's true identity was a selfish maniac, hellbent on finding acceptance amongst monsters.
It's why he tried so many times to impress Asgore. It's why he couldn't settle down with his family - it wasn't enough. It why he isolated himself in his research. In the end, he thought he was alone.
