Some guides in the OP can be a bit outdated, but they should give you the gist of most game mechanics, story etc.
There are a lot of menus and currencies to get used to and some early story chapters may be a bit clunky nowadays.

It's never too late to start.
There were only like three canon events, but mostly about side characters. You could easily watch them on youtube. Compared to Genshin, HI3 mostly had non-canon AU events or just some purely gameplay based.
Hop on, enjoy the story and roll for who you like.
Just be prepared that some beginning battlesuits are boring or clunky and there's a lot of menus and currencies to get used to, but if you only care about story then it shouldn't bother you.
