It really wouldn't work. Let's take something near the beginning for example. Link isn't allowed in to see Zelda, so he has to sneak past the guards.
In game this is done so that we can have a stealth section, which is all well and good. Storywise, however, it makes no sense. The Sacred Stones are the keys to the most powerful object in the world and the Royal Family isn't just going to hand them out to randos they have no connection with. At a bare minimum they must know that the Deku Tree is a giant fucking tree and isn't going to de-root himself, crawl across Hyrule field, and start banging on the castle gates if he ever has to contact them. Clearly he's going to send one of his people with a message, and what exactly do his people look like? Children wearing green, accompanied by fairies. And what does Link look like? A child in green, accompanied by a fairy, with a shield bearing the kokiri symbol too boot. So why don't they grant him an audience on behalf of the Deku Tree, someone important enough to be trusted with a sacred stone? No idea. It doesn't make sense.
That's just one example. The whole story is littered with holes like this. That's not even getting into the issues of Ganondorf being an incompetent villain that only ever lucks his way into victory, or the story's baffling decision to have three different types of time travel. They'd be better off using something like ALttP as a baseline template while just mostly doing their own story.
