Zombies in Elden Ring are Zombies. The "undead" nobles are not undead, they're just shriveled husks because they can't die but they're too weak or insane to find food and eat. All the castles, fortresses and most camping sites have food supplies like potatoes and chicken. Erdtree fully resurrects people it blesses, Tarnished are not undead like TWLD or ghosts are.
