I've been teaching myself on cheaper knives.
Like this adorable tacticool tanto that's cosplaying as a military gun.I gave it an almost mirror edge, it's silky smooth and shaving / paper cutting sharp despite being thick as fuck. The knife is 3/8" thick, it's seriously more spike than knife. Absolute beater knife though - it's made out of D2 steel.
It's also a great project knife because the scales are easily replaceable. Thinking of making wooden scales for it at some point.
