Paper steel is one of the best for kitchen knives, yeah. Sure you can machine it. Hogh carbide steels are overkill for anything but the most demanding restaurant tasks. Way way overkill for home cooking, and it is too annoying to sharpen. All knives get dull, but some are easier to sharpen than others.
