Visiting my dad for father's day and his knives are full as fuck
He's not up to getting a whetstone and being autistic about knife care. In previous years I have sharpened his knives but I have a million other things to do at his place these days.
Has anyone on /ck/ had a good experience with these doohickeys? I'm going to get one to try out.

They're not good sharpeners, they can work okay but if he lets his knives get actually dull, he doesn't care how sharp his knives are and it'll end up in the junk drawer.

I have one. It works fine for what I use it for, which is once in a blue moon running through my generic knives when I find they can't cut through tomato properly. If you're not a professional chef cutting for 12 hours a day it will be fine.

There are no tools for any application that never require sharpening. Drill bits, chisels, planes, saws, axes, anything that cuts anything will dull. I understand what you are posting is bait, but I also work with some dumb boomers who take 11 years to drill holes because their bits are full as fucks "I got the tungsten carbine ones!!". Meanwhile I hook up my drill doctor, and can perform more work in 1 hour than many do in 4. Then they steal my tools. It's all so tiresome.

1. Get a honing steel instead, they do the exact same thing those are purported to do except they actually work and don't ruin the life of your knives
2. Store your knives properly, e.g. don't throw them into a drawer like a retard. Get a knife rack or storage block, otherwise the edges will dull or chip from clashing with all the other shit in the drawer.
3. When you're done using your knife, don't throw them in the sink or they'll dull/chip just like if they were put in a drawer. You should hand wash them as well, technically there are some knives that can be put in some dishwashers but the risks of corrosion, warping, and dulling/chipping aren't worth it.
I'd also second what >>21405274 said - he obviously doesn't give a shit or has no idea how to take care of a knife, so if he doesn't care then just take any high quality knives he has as an early inheritance and don't worry about it.

the biggest problem with pull-through sharpeners is that they remove much more metal compared to whetstones. But, unless you own expensive knives, who cares? it would still take decades to completely ruin a knife (at worst, it just become smaller over time).
Apart from that, they usually do the job. Your knives would never be razor sharp, bur still reasonably sharp enough for almost every kitchen task. And the sharpening literally takes just a few seconds. Just buy a model from a reputable brand and you should be fine.
If you don't mind spending more than $100, you can consider an electric sharpener like pic related, which is a better option.

strop your knife every few hours, sharpen it once every six hours, grind it only as needed. If you sharpen it properly you may need to grind it twice in it's life.

Your blade should be as sharp as possible, and that means removing as little metal as possible, because the outside of the knife is tempered, the inside is not. if you shave...fucking shave the outside off your knife, what is left is the spine. the soft steel, which will never be sharp. like a minecraft steel sword.

So pro tip, if you've got laminated steel knives, the bendy kind, the 2$ kind which won't hold a fine edge, what you want to do is sharpen them on one side only with a ceramic, the bottom of a coffee cut is fine.
This is how I sharpen my dogshit 2$ knives that I use for things like opening cans. they are still very sharp it's just a rough edge which won't hold. I have a salad knife for tomato and lettuce that's sharpened like that, as is my shwarma knife.

The pull through sharpeners are fine for the first few times and get the job done but in the long run they completely ruin the blade.
Just throw out old knives and get new ones. Unless the knife is really good and you really like it, no point in autistically taking care of it for years.
If you throw out your bad knives and keep the good ones you will get a better collection of knives. Use the shitty pull through on bad knives, sharpen the knives you like normally.

The average basic cheap-ass knife set from Walmart costs $30-60 depending on how many knives you want.

If it works then it works. If your knife starts having trouble with edge retention, you want a better handle, or the knife starts to chip then there are plenty of great brands around the $30-50 price range for any knife you could think of. I already mentioned Mercer, but Victorinox is also a good option at that price range. Don't get anything over $70 though; at that point you're just paying for branding and "artisanal quality"

It's a knife. The steel in an expensive knife isn't any better than the steel in a cheap one. You might have a better handle you might not.
Nothing else about the knife has any impact on how it performs, the edge it has or how good it is at cutting.

Impossible to grind in on mass produced blades. 99% of all mass produced knives are way too thick behind the edge as well. You can get handmade knives for people that know how to use a knife and it will perform significantly better. The only downside is you can't be a retard and abuse it or it can chip or whatever.

Mass produced knives have a retard prevention factor built in because people love treating their knives like shit and they will return the knife they fucked up. This comes at the cost of significant performance losses.

And yes handmade knives are better than machines mass producing them. One of the major benefits of small production is that real quality control is possible.
My victorinox was warped and had a terribly uneven and oversharpened concave/appleseed grind that made it a chore to sharpen correctly. Good handmade knives will have excellent edge geometry and not be warped to shit. San mai style knives can actually be restraightened by hand because of the softer steel cladding, so it is a non issue compared to crmov stainless steels that cannot be easily straightened.

Paper steels are excellent for kitchen tasks. This is undeniable. They get exceedingly sharp, have excellent edge stability and they're easy to sharpen. Way better user experience than your crmov ikea knives, and no preventing rust is not difficult. You wipe down your blade after using it.

S grinds and complex blade geometry cannot be ground into blades, or at least has never been done. Please find me the s grind factory. Forging also helps reduce grain size.

My point was that even if a san mai blade IS warped when you get it is easy to fix unlike mono steel blades, which you cant. Also single bevel naturally warp as you sharpen them down. Please pay more attention next time.

Paper steel is one of the best for kitchen knives, yeah. Sure you can machine it. Hogh carbide steels are overkill for anything but the most demanding restaurant tasks. Way way overkill for home cooking, and it is too annoying to sharpen. All knives get dull, but some are easier to sharpen than others.

What I have learned is that magic hand made knives have this special S grind shape that can't be made by a machine, not even a 7 axis CNC machine, only human hands. This magic hand made knife that needs softer steel to be easier hand forge is not only sharper it's also stronger, can be bent back into shape by hand, feels better, makes better food, and has a property of 'food release' that only hand made knives can do.
