Im gonna post some theories

1: This part is referring to a future chapter, specifically the Asgore flowers chapter, where it will be implied that the prince is in fact Asriel, son of King Asgore

2: The girl with hope crossed on her heart is Dess, (gonna lean on the Dess having Kris's soul theory and her being corrupted because of it) this will have the knight be Dess, but physically suffering being the knight and being controlled by an exterior force, hoping that someone saves her

3:could also be that she is consuming other monsters for determination since she wanted to do something with toriel, Carol couldve set up Asgore getting removed as chief and get divorced in an attempt to make Asgore drive himself mad, have Dess consume him and make everything look like a suicide
since "determination" is actually "de-termination"(to not die)
