The easiest difficulty is actually the hardest difficulty because the hardest difficulty is what brings me the most comfort and enjoyment, whereas the easiest difficulty is difficult to go through because of the amount of effort I have to actively spend trying to stay awake while playing it. Being able to say "I beat the game" implies that it was a single-handed, solo experience, since the subject of the claim "I" in "I beat the game" only suggests that one person, that person being you, was the one to beat said game. If you used a summon or companion, it no longer becomes "I" but "We" instead. Insisting on saying "I" when summons or companions were present is devaluing any impact they had on the fights, and you are pretending that they do not exist. In essence, you literally cannot say "I beat the game" if you used a companion because by definition, it is inaccurate. You definitely saw the credits, but it wasn't through your sole effort alone that made you reach the credits. You have to give your summons credit as well. Not acknowledging the NPC summon after dragging them into the fight is more validation-seeking than simply not summoning them at all.
