Turns out the Moonlight issue goes away on Switch mode. Might be a polling rate issue?
Need to give the sticks more use, but this seems like a controller worth recommending for retro use, fightan/shmups, portability, or for anyone who doesn't care about analog triggers, back buttons, or software customization. Look forward to me bitching about Gulikit being the worst brand ever in a few months.
