Ahsoka could take care of herself, so it'd give Anakin more confidence that everything would be fine with her, and he doesn't always have to be there, and he doesn't have to feel obsessively responsible over protecting her everywhere. The idea was for him to train her to knighthood, raise a capable woman, and then it would teach him how to let go of his attachments and put his mind at ease.
