They're allowed to do that for the same reason special ops cadets are allowed to be waterboarded and tortured in their training. Every legal system (probably) has provisions in their labor and criminal law codes that allow extraordinary limited circumstances where inhumane treatment like that is legal. Usually during military training, but astronaut training would certainly fall under that. If they had to live like that for a longer duration or through their entire schooling, that would definitely not be fully allowed though
