I think it's just scientific illiteracy and appeal to nature fallacy, such people are generally suspicious of things that sound too good to be true. I've never seen actual incontrovertible evidence that aspartame is harmful to human health in the quantities found in diet soft drinks. To me, it's just better living through chemistry, and I have at least some faith in the regulatory capacity of the FDA and European equivalent agencies.
