If some burnout cokehead can do it between his smoke breaks while juggling 10 other orders you should be able to able it figure out how to do it at home. There's nothing special about the equipment and ingredients at most restaurants besides the fact they're designed to handle larger amounts of throughput than a home kitchen.
And yeah the butter/oil/salt thing is a US thing. I dont know a single restaurant near me that doesn't dump 80g of fat into every dish they serve. Restaurants here are for inebriated boomers to gorge themselves and get heart disease.
