The core of the game is stellar travel. If that one exact thing isn't doing it for you then this game will probably never be for you.
Boring is a fair objective opinion but the claim of "shallow" some are making is factually wrong.
The boring factor you're describing proves what I said earlier though:
No Man's Sky current biggest problem is Hello Games. Every interesting gameplay idea keeps getting passed up for some kind of farming or resource addition.
No Man's Sky is not shallow.
But I will happily admit it's fucking boring. That's what space travel is.
