You could just go into folklore and make races out of mythological creatures.

The Psoglav is a Slavic creature with horse legs, a cyclopean dog head, iron teeth, and iron nails. It's a ghoul that plunders graveyards for food. Even if you gave it two eyes, dropped the iron teeth and claws and blended the canine and equine elements more than head and legs, you've still got something entirely original in comparison to standard fantasy.
