The entire game's mechanics focused around paint. The whole game leading up to that point was hinting that the game had something to do with paint. The main villain up to that point is called the paintress. Enemies fight with paint brushes and the gestrals are sentient paint brushes. And now I understand why you didn't want to explain why you didn't like Act III

The canvas is a world inside a world. Staying in the canvas has deadly consequences for those that enter. The people inside the canvas are sentient, so keeping the painting around also has moral dilemma as well. Its not a "dream" if the world has consequences for those outside of it.
