Demon's Souls has genuinely better level design that lends to it being the preferable experience depending on what you're looking for in a game.

Dark Souls is interconnected and sometimes feels too big for its own good in a lot of its areas, while Demon's Souls has separated worlds that each have their own unique levels. The enemy placement and progression through Demon's Souls' levels is still some of the best From has ever done. Demon's Souls is extremely well paced and feels good because of that. It's why I've always been a fan of that type of level/world design where things are level-based rather than being interconnected or open world.

AND, while I'm at it, Demon's Souls also has smoother player control and faster attack animations with some weapon types, so it also feels better to play as well. The best thing Dark Souls 1 has on Demon's Souls is the estus system.
