I think mature romance is just romance I believe in the relationship as something that "could" happen. Doesn't matter if they're together or not or in a will they won't they sort of drama, if I believe the characters are acting like something that resembles humans then to me that's mature romance.

The typical shounen romcom or shoujo melodrama fundamentally violate that principal, as a rule.
