In the scale field, try using 'resize to' rather than 'resize by' and use a standard SDXL resolution (1024x1024, 896x1152, etc.)
Assuming your inpaint mask is only on the area you were sketching, the other pixels should be left behind properly.
If you're applying img2img on the whole image, you'll expect some stuff to get lost (especially since in this instance you're not prompting for much that's related to the rest of the image).
My guide was primarily written for people to clean up gens they were making from scratch - it's not quite the best set of instructions for editing other images (you'd probably want to use the sketch tab to add a general shape/color of the added bits you're after, and then use a tight masked inpaint to change the blob into what you're after).
