unironically try playing handheld, extra width and weight helps filter out shakiness and lets you get away with low-ish sensitivity better than regular pro controller. if that works out better for you, get wood, and maybe more pro controller-shaped joycons (see if they got gyro though) to play on tv.
if shaking is only in one hand, you can remap the controllers and use right joycon in left hand and vice-versa, right joycon is the one that aims.
