A few things.
Firstly, saying something doesn't "look like an anime" does more harm than good since "anime" is not a style, its a collection of styles from an entire nation, because anime is still a medium of animation at the and of the day that can and does have many styles
Secondly, Genndy, for all his faults, at least tries to pay tribute to other artists that inspired his work. On the eastern side, you can tell Monkey Punch (Lupin the 3rd), Shotaro Ishinomori (Cyborg 009), Fujiko Fujio (Doraemon), Tatsuo Yoshida (Speed Racer), and of course Osamu Tezuka (Astro Boy) all played a major part is his art.
Which is more than than I can for most "western anime" styled shows, that only copy the most superficial parts of any given anime. And what you're saying is true, many western filmmakers now are taking inspiration from anime and understand it better than western animators. Sinners, understands the cinematic language of anime more than Netflix Castlevania ever did, to say nothing about Toku and Japanese cinema.
