My theory is that as fans have had literally decades to endlessly debate and discuss story theories, GRRM realizes he could never write anything that would satisfy them and that would hurt his legacy.

But by leaving ASOIAF unfinished, when he dies the fanbase can continue to endlessly debate and discuss theories all the while praising GRRM for what he did manage to get done.
