Brad Bird deserves credit for many things about Ratatouille, but the character designs aren't one of them. Those were created when Jan Pinkava was the director.

All the character designs in Ratatouile were created under the supervision of the original director (Jan Pinkava). By the time he was replaced by the Incredibles director, the character designs were already finished.
