I am pretty close to such a person, and I still don't actually like every single genre of music. Usually, when someone says they like all types of music, it's because they are too lazy or unwilling to pick a favourite music genre, and don't want to be pigeonholed. That might sound fine, but it's often quite offensive as an answer because "What type of music do you like?" is just a conversation-starter question, and a vague answer gives the other person nothing to work with.
