I made a tuna grindah recently and instead of mixing the seasonings, onion, capers, etc into the actual tuna I made a butter with all the good stuff in it and used it as a spread on top of plain tuna/mayo. The spread was very tangy and intense but each bite was perfectly balanced and each chew was another dimension of flavour bursting forth
