>>21399321I mean the filling isn't trivially easy, but it's far from hard or involved - it's really just about being able to season to taste without tasting it because it's still raw at that point.
Most importantly though, you can make it in a big batch and then have it for when you feel like it, at which point the process becomes: Heat up a pita, add filling, fry. Few sandwiches that can rival it in terms of being easy to make at that point.
I'll grant you that the bread takes some skill to get right, I've seen many people burn theirs, but it's really just a question of paying attention.
Yours look great, that pic I attached was from ages ago and those were realistically overfilled, which makes cooking them much harder, yours look much more reasonable in terms of filling amount.
My "cheat" for lazy hawashi is to just throw some tomato, garlic, green chili and an onion into a blender, mix until it's a liquid but still with chunks, not smooth (food processor would be better), then mix that with the meat and spice it. The whole process of making the filling is sub 10 minutes at that point.
And if you're not picky about the bread being perfect you can make a lot of them in the oven in batches for a lot of guests.
