Alright, so because you want M855 protection we're going to throw out the entire lot of all-PE plates. The lightest available options then are the 3.6lb Hesco 3811 and the Highcom 3S14M, same weight BUT the plate is undersized. The 3811 is sketchy and is part of Hesco's "likely underbuilt" cache of plates including the 3801, 3801LV, and 4800. There is a 3811LV but it seemingly hasn't been released yet. I do not trust that either.
These plates are NOT rated to defeat M855A1, which is a critical threat IMO. You don't want to break the bank either, so this calls for the LTC 19513.
It's about 5.4lb (9.5x12.5"), $760 a set, rated for M80, M193, M855, M855A1. It's a "III+" so it will lose to heavier hitters. M61, B-32 API, and of course M2AP. Make sure those threats aren't a problem.
Ironically it's III to III+ plates that are often much more expensive than IVs. Alumina ceramic is cheap, UHMWPE is comparatively not. You need more backer for Level III since it's a six-hit multi hit req, more ceramic for IV since it's a one-hit req against a much beefier steel-core threat.
TL;DR LTC 19513. Cheaper options are Militech RF2 Silicon Carbide and RMA's 1092 G2, neither of which are as reputable and both have caveats. The former is Chinese and relies on youtubers, zero NIJ certs too and they lie as to why they have none. The latter is from a company with a history of shenanigans and poor performance.
