Imperfect Pantheons are no less a cop out than a monotheist god, especially since Pantheons tend to have an overarching singular super-god responsible for creating the world while they (good&evil gods) "only rule over specific aspects" to the point of irrelevant.
Sometime with an abandonment/disappearance twist, going back to the singular super-god only remaining as a "don't question it" singular force.

The point remain that if you want supporting god(s), to be a moral option, then those gods need to be responsible for what's happening.
Not just be name-dropped as the reason the human use white magic while the monster use dark magic.

It's the difference between
>Man use "good" magic to do horrible evil-by-any-name things "in the name of good" without ever loosing his power or expecting an answer when he pray.
Versus
>Man followed a god directive all his life, then one of those directive make him change his mind and follow another, taking followers with him, his ex-god take note and but only to reach his objective better next time.

>because randoms in the world would simply rush to the higher power who is making the world a better place
>because the deity is verifiably making things better
We are naturally suspicious of deal "too good to be true". We would even rather invent a non-interventionist god and claim the (real) superior being is a devil seeking to gain control of your soul.
That or following the "GOOD GODDESS OF GOODNESS" is safe but boring as fuck, or you think she's overbearing and sap the human spirit, or think the world is better with multiple nuance of goodness than one.
