One of the biggest things that trips up theorycrafters is "what does this idea actually do for the longer running plot?"
Example of Papyrus as the Knight, simply on points of interest, points against him being the Knight, and how it would fit into the longer running plot or what it would do for the game's themes, up to and including returning Undertale characters using abilities mostly like their Undertale selves in the dark world:
