Going backwards after 4 means you'll lose:
>Enemy rear rows (4 introduced the enemy back-line)
>free party formation reorganization in battle that doesn't consume turns
>rare enemies that are shiny, act super quickly, and give out tons of exp
>no over-world map but 4 is the only one that has this (3 has a sea map but it's more of a side thing)
>rests that cost two levels (it's 5 in the DS games)
>no special states that don't consume buff slots (4 started the "states" idea)
That being said, the hd collection does add a lot of important QoL from the newer games that makes them feel more up-to-date (like fast movement speed, 4 is now the slowest). If you start with 4 and like the series, you should be able to enjoy 3 as well. The first two are a bit more "dated" even with the QoL additions of the hd collection but are still good. I usually would say to start with 3 but I guess some new players find the series harder to understand at first so it's up to you. It depends on your experience with turn based games and gaming in general. 3 isn't impossibly hard or anything but you're expected to sort of know what you're doing since it's the third entry in the series. If you end up playing the Untolds at some point, make sure you choose classic mode.
