the metal aftertaste is a factor, but a minor one. a bigger one is that mesh allows through more oils and fines compared to a paper filter. some folks prefer that presentation however. also they can be tricky to dial in bc they flow fast but clog easily ime. paper filters are much more popular so youll be able to find a lot more advice and help on using them compared to metal filters.
