since we are schizoposting- knight is left handed. toby has been pretty consistent with depicting all the holidays, including dess, as lefties

when you get to the UT characters, its less consistent.a lot of the newer promo sprites contradict the usual hands, probably because it's literally a flipped sprite kek. but from what you can get off the battle sprites, mettaton, sans and asgore are all lefties, or at least can attack with their left hands. undyne can use both hands to throw her spears, but favours her right.

tldr toby just now realised he should assign handedness to his characters after making handedness a plot point.
