Idk about EU5(wouldn't be surprised if it had that) but Buddha as a Hindu deity was already an option in EU4 for Majahapit and Sunda through missions as well as for Cambodia if it went back to Hinduism. I can see this concept returning in EU5

The dev diaries make it clear that "Eastern Buddhism" is a bit broader in scope than just plain Mahayana, see pic related containing available groups for Eastern Buddhism as well as this particular line from dev diary

Combining the choice of 3 sects that with the promote/disfavor mechanic gives as a rough idea how would things go in-game: Goryeo follows some Buddhist sect, Musok and probably Confucianism, most likely promoting Buddhism; then Joseon comes to power, promotes Confucianism and disfavors Mahayana and also presumably also Musok.
