Stop drifting.
The AI is designed to get insanely busted the more you drift. And ONLY drift. Wall Riding. Rail riding. inline drift. taking short cuts. aerual tricks, etc will NOT crank up the AI. but drifting around turns WILL. so if you want to 3* knock out tours you need to not drift till the last section, since you must hit 1st at each gate.
They may still just get random extra speed buffs compared to what the character + kart should allow though, but not drifting helps a ton
