Characters & karts have hidden stats for road, terrain (dirt), and water speed bonuses. The 1st is generally most valued, hence why for example, out of the entire 3rd weight class (Toadette, Nabbit, Toad, Koopa, Shy Guy, Stingby, Lakitu, Cheep Cheep), the first two (or rather, Toadette mostly, people dont like Nabbit) is often seen on time trial or online, because they have the road bonus.
Vehicles are especially fucked. Look at the circled stats, and consider that 90% of the terrains are roads (Moo Moo is dirt, Shipyard is mostly water, Salty Speedway & Peach Beach have some water). If you were wondering why everyone was on the Baby Blooper, you have your answer.
