Dršťková, Zelňačka and Česnečka are by far my favourite soups from my country. Classic and amazing Czech soups everyone should try to make or eat (ideally outside of Prague).
Outside of it I'd choose Borshch (with sour cream), Molokhiya (with a spicy tomato sauce) and Pho.
