How do you practice in the lab? If it's just a basic "aa when they jump" then you should add in other recordings to try and simulate a real game mental stack. This is available in the training mode preset but they are off by default.
Otherwise if you feel like you could react in time or are reacting to other quicker things but find yourself completely freezing up when they go up in the air then you need to really hammer down your mentality. Play games looking for and baiting them to jump and only focus on anti airs. Doesn't matter if you lose or not just only focus on hitting the dp and nothing else until you (rightly) consider them jumping as free damage for you.
