There was also likely a 3rd pilot (relief pilot) sitting in the jump seat for take off since it was a long haul flight the crews are usually augmented and the extra pilots are required to be in the cockpit for takeoff/ approach and landing.

Could have easily been the jump-seater reaching up and switching off the fuel control switches while the Captain and F/O were distracted with the take off and climb out
