I'd be extremely surprised if they'd be able to keep up with a minecart, but then they only need to deposit into a single chest as they go by it. If their AI scans for chests in a single tick it might work. Unless that 7-second cooldown kicks in because they can't path to the target chest due to being in a minecart

Now that I think about it, depending on its reach you might be able to have a minecart right behind a copper chest, and a whole wall of regular chests behind the minecart, and the golem would basically become a mechanical arm at that point. Just grabbing and inserting without every having to move
