It's not skill, it's pure memorization. Not knowing how to dodge waterfowl dance has literally absolutely nothing to do with skill, just trial and error. You literally can't beat malenia unless you figure out a way to deal with waterfowl dance via trial and error. Same to a lesser extent with most other bosses. Margits cane windups are literally not possible to not get hit by unless lucky or you memorized the timing. It's trial and error.
Ironically trial and error is what people always accused souls games of in the past, pic related. In those games you could always avoid deaths with skill and caution though. With ER, it became real.
