It's taken me about three years to figure it out, but yes there's stuff worth perusing and understanding about Elden Ring. It's just that the stuff that isn't worth caring about is greater in volume. Elden Ring at its core tells the player that one should not seek godhood, as it only ever leads to the ruin. One should learn to integrate one's Shadow (usually Jungian, but Elden Ring makes an actual Land of Shadow Marika sealed away) and Animus/Anima (Radagon, Trina) into their life so as to become whole. The pursuit of godhood inherently necessitates rejection of your Shadow and Anima/Animus, leading to ruin. Radagon sought perfection outside of Marika, and ended up becoming a mere puppet of the Elden Beast and Golden Order. Marika rejected her Shadow and ended up a slave to the Golden Order. Miquella rejected his Anima in Trina, and is felled by our hands.

Problem is there's tons of shit that doesn't matter. Notice how my summary doesn't mention the Two Fingers, the dragons, Farum Azula, Metyr, etc.

You're pigeonholing storytelling. This isn't the valid argument you think it is. The only thing you're saying here is
>I don't like the Souls/Elden Ring style of storytelling
