Odd idea, but what if the Knight is kinda like Lycagon from Shangri-La Frontier?
In SLF, Lycagon is this insanely powerful wolf boss monster that shows up at night where it's form seems to literally blend into the night itself. When the MC finally beats it, it gets revealed that the whole time it was merely a shadow of the REAL Lycagon, a projection of her power that could only appear in the night.
What if the Knight is similar? It's form is very amorphous and similar to the Shadowmen. And it got really angry from Susie pointing out that without the Fountain it's nothing.
What if it is merely a shadow being projected by the real Knight that can only appear in the Dark Worlds? That would explain why it would have needed Kris to open the Chapter 3 Fountain, perhaps it can't exist in the Light properly because it's made of shadows and Dark.
