Some say you are named
for a secret Catholic society,
the Carmelites.
Others say you share their eponym,
Mount Carmel,
a geographical feature in Israel,
the promised land.
Still others say that your name means
"little garden-land",
for "garden-land" is what "Carmel" means in Hebrew,
and "ita" is the Spanish suffix
referring to things that are diminutive and feminine.
But to me,
although I know this etymology to be false,
as so many things are,
you will always be my sweet candy,
as though you were all wrapped up in paper and wax,
my little burnt sugar.
