Maybe Mortal Thor will bring us somewhere interesting, but I still just don't really get what the theme a Thor story in general is meant to explore.
This is theme of the vast majority of Thor stories. Thor's character is the duality between the immortal and the mortal, embodied by him being the literal son of both Odin and Gaea. The other gods are constantly trying to understand why Thor is so attached to Midgard when to them it's just a random realm that pales in comparison to the immortal splender of Asgard. Only Thor realizes that the transience of mortality is itself what makes life beautiful, in comparison to the gods who live immortal yet static and monotonous lives. Thor's goal is to imbue godly virtues on to humanity, not just to guide them into leading better lives, but to guide himself as well. Through the extolling of these virtues, humanity can become more virtuous and godly than the gods in Asgard and go beyond them. That's the main theme of Thor stories since the Lee/Kirby run, and is heavily emphasized past Len Wein's run into Simonson's and DeFalco's and beyond.
