The user-scope ones that aren't necessary are removed, sure. The fundamental ones from %SystemRoot%\SystemApps that drive stuff like windows defender, lock screen, start menu experience etc. - not really. All part of what Microsoft deems as "user experience", so they're intact.
So don't be surprised that the UWP apps must still be yet serviced by the system.
