The Empire and Rebels campaign are both kinda fun, in the expansion the Consortium campaign is less novel for a few reasons, they're overpowered and the pacing is off. Playing the base game/expansion will give you a good handle on shit for you to move into mods.

Everyone recommends Thrawn's Revenge but I couldn't get into it. I like Republic At War and Rise of the Mandalorians. I'm also sure there's a mod for KOTOR era ships but I haven't looked into it.
