Sophitia and the rest of her family are blonde because she was based off of Namco's Valkyrie on one hand and Alexander the Great on the other (hence her surname). The Greek letters on Sophitia's and Cassandra's swords in high-res 3D renders are actually supposed to be the Priene inscription of Alexander the Great, but most of them butcher it because Nips can't into Greek: https://the-library-of-alexandra.neocities.org/pages/misc/trivia/omega_and_digamma_sword_inscriptions Alexander was at least traditionally thought to be blonde. Some Greeks are blonde nowadays and many probably were in the 16th century. But why are Sophitia and Cassandra so pale and why do their stages feature icy breath or snow most of the time? They live in Greece ffs, they should be tanned throughout the better part of the year. No one in Europe associates that country with deep, snowy mountains like these. The mountains in Greece aren't even very tall. That's definitely Scandinavian/Germanic influences from Valkyrie creeping their way into stage design a little too much. More modern SoulCalibur games like SC4 or SC6 have Greek stages that look more like Greece, oddly enough.

SC2 is just lazy where it comes to its stages. There aren't enough stages in the game for every character. Multiple characters can share one stage. If you encounter both characters who use the same stage in arcade mode, one of them will use a different stage from a character who doesn't appear. Some other SC games have Valentine Mansion stages, which make more sense for Ivy.
